Usually a Mac will try to keep its temperature at around 100 - 115 Internal Temperature, while the CPU chills a few degrees higher. If you're trying to go for heavier loads, then expect it to throttle. The stock fans can provide adequate cooling for some moderate jobs, but not long term heavy lifting. The GPU, depending on the age of the machine can and will give you problems. (Blender, Unity, and some low maintenance games). I have a 2014-15 Mac Book Pro, which does decent for what I usually do. Cooling on a Mac is rather difficult to usually control, especially with how it's designed.
